SOUTH OF THE BORDER BUFFET

All entrées below are served with refried beans, Spanish rice, tri-colored tortilla chips and salsa, Santa Fe salad, Caesar salad, fresh baked cookies and fudge brownies, an assortment of regular, diet soda and bottled water beverages.

Fajita – Select one: Grilled Chicken Breast, Steak, or Carnitas; sautéed with onions, tri-color bell peppers, cilantro and lime. Accompanied with warm flour tortillas, guacamole, jalapeno, fresh limes, sliced olives and sour cream.

Chicken, Beef or Cheese & Potato Enchilada – Hot off the oven with melted cheddar and Monterey jack cheese and fiesta toppings.

Make-Your-Own Tostada and Taco Bar – Southwestern Beef or spiced Chicken or Carnitas, warm tostadas and tacos, onions, jalapeno, lettuce, olives, fresh limes, shredded cheddar cheese, guacamole and sour cream.

Tri-Colored Nacho Grande Bar – An abundance of tri-color tortilla chips with salsa, spiced beef or chicken. Accompanied by freshly made salsa, warm nacho cheese, jalapeno, olives, sour cream, guacamole, fresh limes and onions.

Served with garden salad – field greens with grape tomatoes, sweet onions, cucumbers and dried cranberries with house and Italian dressings, and Tuscan Salad – crumbled gorgonzola, tomatoes, cucumber, romaine & onion salad with basil vinaigrette. Gourmet Lasagna – Traditional deep dish lasagna, with choice of hearty meat sauce or white harvest vegetables & cheese lasagna.

Cheese-filled Tortellini and Julienne Chicken – Served with sun-dried tomato & pesto cream sauce.

Fettuccine with Chicken and Crimini Mushroom – Italian style herb chicken breast in Alfredo sauce.

Radiatore with Italian Meatballs & Sweet Sausages – Served with our zesty marinara sauce.

Jumbo Three Cheese Ravioli and Julienne Chicken – Shiitake mushrooms and white wine cream sauce.

Linguine with Shrimp & Clam – Served in a lemon wine-caper cream sauce.

Penne Pasta and Sliced Chicken – Tossed with harvest vegetables and fresh herbs in garlic white wine sauce.

All Pan-Asian buffets include fragrant jasmine steamed rice, Asian Bok Choy & Napa cabbage with ginger soya vinaigrette, Mandarin fresh fruit salad. Home-style chocolate chunk cookies & fresh made cookies and brownies, with an assortment of chilled regular, diet and bottled water beverages.

Teriyaki Chicken and Broccoli – Grilled chicken breast laced with pineapple Teriyaki sauce on a bed of steamed broccoli.

Ginger Plum Chicken – Boneless chicken breast baked in a tangy Asian plum glaze.

Asian Teriyaki Spare Ribs – Oven roasted teriyaki spare ribs with pineapple teriyaki glaze.

Szechwan Beef Stir Fry – Harvest vegetables, sliced beef in sweet and spicy Szechwan sauce.

Thai Basil Curry Chicken – Grilled chicken breast with mild basil curry sauce.
